Applewood grilled salmon filet with apple lime salsa
Serves six
6 each 6 oz. skinless, boneless salmon fillets
For the salsa:
3 cups cored, diced Fuji apples my favorite or yours
1 yellow pepper, finely diced
3 scallions, cut into a fine rings
Juice of one lemon and one lime
Splash of water
2 tbls. avocado oil
Salt and pepper
Preparation: Lightly salt and pepper the salmon filets. Preheat your grill to very hot (about 450 degrees). Place your pre-soaked wood chips in a smoked pan over the propane elements or directly on to the briquettes. Place the salmon on the grill top and cover the grill. Once both sides of filets are marked, place face side down on an indirect heating area of the grill and cook until internal temperature reaches 135 degrees.
In a mixing bowl, toss all the salsa ingredients and season to taste and chill. This relish may be made as much as two to three hours ahead.
Mashed potatoes with horseradish and chives
2 lbs. red potatoes, cut into quarters
½ cup half-and-half
3 tbls. whole butter
1 tbls. prepared horseradish
2 tbls. minced chives
Salt and pepper
Preparation: In a small pot, boil the potatoes until tender. Drain and place back into the pot; add the butter, half-and-half and horseradish. Mash until blended. Add the chives and season to taste.
Serve with asparagus spears (when in season) or green beans.
